Grilled Tilapia with Mango Salsa
I couldn't believe my eyes the other day when I was at the local grocery store and saw fresh tilapia for $3.99/lb. I knew I had some fresh mangoes in my fruit bowl at home just waiting to be pureed into baby food for my daughter ~ stealing one to make fresh mango salsa couldn't hurt! I came right home to brave the 30 degree temperatures and fired up my trusty grill (you can also easily make this recipe on a grill pan indoors). A few minutes later, I had delicious grilled tilapia covered in a delicious salsa bursting with mango, sweet red pepper and lime. Paired with warm, crusty French bread and creamy mashed potatoes, this tilapia makes you feel like you're on an island vacation even in the middle of freezing temperatures! Serves: 4 Ingredients: 4 filets of tilapia olive oil salt, black pepper lemon or lime juice For the salsa: 1 mango, peeled and diced 2 tbsp. fresh lime juice 1 tbsp. finely diced red onion 1/4 cup diced red pepper 1/2 tsp. minced jalepeno 2 tbsp. minced fresh cilantro kosher salt, black pepper Assembly: Mix together the salsa ingredients and allow to sit for at least 30 minutes. Drizzle oil over the fish fillets and sprinkle liberally with salt and pepper. Grill over medium heat for approximately 3-5 minutes on the first side, 2-3 on the second side (or until fish is no longer transluscent). Squeeze fresh lemon or lime juice over the fish and top with the salsa.
Thanks, Casey! It's super easy to make (make extra salsa; it's so good the next day with chips!) Let me know how it goes :) We had a Cheddars in the town where I went to college~ definitely miss their burgers!
